Among the many things a long weekend can bring to a soul: over-ripe bananas forgotten on top of the fridge while a person’s been off gallivanting on the mainland, skiing and whatnot…
A usual strategy ‘round here for a problem like this would be the ‘mash-n-freeze’ to deal with another day… However, I’ve been sensing a bit of overcrowding in the old freezer. A time to use up what’s been stored and replenish with new lunchbox delights…
So this evening took a ‘mash-n-use’ approach which resulted in two highly delectable concoctions of the baked banana goodness variety…
As a regular user of Tastespotting.com, imagine the serendipity I felt when I checked in this morning, only to find out tomorrow is Banana Bread Day!
Chocolate Banana Muffins (*fat-free – shockingly!)
*Notes – the recipe calls for 1 cup of chocolate chips, which would’ve resulted in a chocomania, so I substituted 1/2c with coconut, which proved a delicious variation.
Coconut Banana (a.k.a. ‘Everything’) Muffins
*Notes – Because I can’t help myself, I also added in some miniature chocolate chips… That said, I had it in mind that I had hybridized a couple of recipes using this as a base the last time I made muffins, but was stymied half-way through wondering where the oats were and what I’d done differently.
